Further to my post on the exquisite smell and taste of bacon. Many years ago I saw a girl wearing a T-shirt that had on its back the image of two pigs copulating. Underneath the image was the statement: "Makin' bacon!"

Serrano pigs are actually fed on acorns and they run wild under the Oak trees. My grandfather was from Iowa and his family raised pigs. He said pigs don't really like to wallow in crap and muck, but that's just the way some farmers or farms keep them.

The Iberian pigs that ham comes from are supposed to free range and forage for roots and acorns. There are industry standards about how the pigs are raised and the ham is cured. But of course pig does simply disgust many people no matter how it lives.

The relationship of pig and eating ham in Spain is really interesting given Spain's history as a country that has had both large Muslim and Jewish populations in the past. I think there's some notion that at one point eating cured ham in public would ensure a person was not viewed as anti Catholic. I've heard and read that many Jews had to convert religion or leave Spain and that eating the cloven hoofed animals was a sign if one stayed in Spain that you were not practicing as a Jew in secret. During the times of the Inquisition this could be a life or death situation.

I suppose from an orthodox standpoint eating jamon would be breaking the kosher laws. But if eating the ham is wrong, then I don't want to be right. ( he says as he finishes his al pastor burrito)

To futher my post,

You know I've always felt the Serrano cured jamon is better than any other cured hams. In the US we have cured ham, but it's not good. Italy has the cured hams, but nothing compares to paper thin, melt in your mouth jamon.

Some documentaries about how it is raised here in Italy , or a quick perfumed smell in a supermarket will make you change your mind, not to start eating this of course but only understand why it's so famous. Hence, i do agree with you Kudo

Kudo, where are the "scientific facts" you mention, to back up all of your observations and statements regarding the relationship of eating pigs (ham, bacon, pork) and human behavior? Please provide the "scientific facts" to substantiate your theory.

All I have to say in response you Kudo is that if you don't like jamon, then that means more delicious fatty pig for me.

I only bring up the religious part because some other foro correspondents like to talk about history and culture of Spain, which I find quite enjoyable.

And besides the human being is no less disgusting in it's habits than a pig, yet human beings are cannibalistic. And that I think is why human meat is referred to as "Long Pig"; Human flesh is supposedly very much like pork in taste and flavor.

If you ask really nicely I'll make you a guitar shaped like a jamon serrano. Then it will smell like fresh mountain air dried cedar.

Kudo if you eat beef, fish, chicken, goose, duck, deer, you're still going to eat a lot of unsavory fatty things. Hormones, and all kinds of icky things. The jamon serrano is is whole differnt thing.

If you are a vegan or vegetarian you're still taking part in system that makes consumer goods from animal products. I love self righteous vegans who go on about meat eaters and then I check out the shoes they are wearing which are glued together with animal protein based glues.

I live in San Francisco which is the politically correct capital of the universe. I've heard it all. Besides Paco is obviously a fat degenerate who's toque would be much better if he would only eat more vegetables and no meat. What a jamon eating
slob.

hehe, I'll never forget when I walked into the apartment that we were renting a room in in Sevilla to see this gigantic leg of jamon propped up on the countertop, staying there unrefrigerated for weeks...
Like it or not it's as Spanish as Flamenco, probably more so.

Actually I just realized, all great flamencos eat jamon and drink Cruzcampo..OMG. That's the secret! Kudo, I know how to fix your Solea

It's been scientifically proven that eating fat does not make you fat. What makes you fat is the way your body metabolizes carbohydrates and how that effects your glycemic index. Lots of cultures eat a fatty diet because of the geographic conditions and how that effects body temperature an metabolism.

And you are sure, Kudo, that all those men walking around naked in front of other men in the gym's changing room do so because they eat pork!!! Did you interview each of them? What if some did not eat pork? What would be your explanation for their walking around naked in that case? It couldn't be because in the West our culture has no objection or prohibition regarding being naked in gym locker rooms, men or women, could it? And could it be that in your cultures that do not eat pork, it is culture, not the absence of pork, that creates the prohibition against appearing naked in a locker room, even before ones own sex?

Just an "unscientific" observation on how culture, rather than the consumption (or lack thereof) of pork might determine such behavior.

No arguments there. But there are a lot of North Americans who eat healthfully and a lot of other people in the world who don't.
The typical Spanish diet seems pretty horrendous at first glance because it's full of fat, salt, white bread, etc. BUT at least they have a food culture that's been passed down for hundreds of years and includes REAL foods. IMO the real killers are all the processed crap that we eat here that's full of high fructose corn syrup, hydrogenated fat and 15 chemicals from some factory in New Jersey...
