I used to work as a restorer/polisher . One day in an antiques shop I was in the back polishing , An Indian family was in the store , and a young man came back and was watching me .
" It brings back memories " he told me .
His uncle was in the shellac business , and he used to go with him to the countryside where shellac was harvested from the trees . Young boys would climb the trees and shake the branches . He described the cleaning of the lac and the cooking of it , and said they camped for a few days while this was going on . Transportation by camel .

I think most finishes are nitrocellulose lacquer.

yes i guess so , for better finish is nitro and shellac usually , but i think it will depend of the skill , theres some that use nice poli and know how to make it great, others better nitro and so .

Shellac (well done) has the most pure sound , but i never heard a good quality flamenco open pour guitar , if someone found a video please post it, so we can compare Shellac with Open Pour
