I don’t think I’ve ever fried up a more delicious batch of fries than this. And yes I humbly apologize as this plate of fries was in fact, tastier than it looks.

Umeboshi iwashi
Salt plum sardines
Fresh cleaned sardines- Put enough water in a pan to barely cover your iwashi. Put in 1/3 shoyu ( cooking soy sauce) 1/3 mirrin 1/3 cooking sake Fine slice two thumb sized chunks of peeled ginger, grab 3 to 5 salt plums.
Bring to a boil and then reduce to simmer. Add iwashi neatly to pot. Add 1 tablespoon brown sugar ( western Japan style optional) High simmer for a few minutes, reduce to lowest heat. Simmer on low for 15 minutes tightly covered with foil cap. Turn off heat and let fish rest.

Do not be fooled ladies and gentlemen, these salt plums are not Firefrets’ raisin textured nuts. These are old preserved ume ( green plums) they were put up before 2012 by my wife’s mother, we are still using them. This is how food was preserved in Japan and many other countries & cultures before McDonald’s and Westinghouse refrigerators spread across the globe. Take notes now you young fellers.

When you serve a whole fish, you want to plate it as if it’s swimming in front of the eater. This fish will open up with your eating utensils whether it’s fork or chopsticks and neatly separate from the delicate bones.

Another cuisinial movida, getting the hamburger bun on the meat patty. It doesn’t my matter with you use mayo, mustard or thousand island dressing, you’ve go to fit the bun to the patty with precision.

I work a sourdough starter I’m the colder winter months when it makes sense to bake in my little cabin.
A few weeks ago a made two nice sourdough rosemary boules. Then I raped the tip of my left index finger with a sharp serated bread knife… Longest I hadn’t played guitar in a decade…

I prefer my flamenco guitar spicy, doesn't have to be fast, should have some meat on the bones, can be raw or well done, as long as it doesn't sound like it's turning green on an elevator floor.

Just because of the structure of the title I am reminded of this gem from an Ian Fleming novel. Tiffany Case, who is a much more interesting character in the book than the movie, says at one point in Diamonds Are Forever: "It reads better than it lives."

Somedays, I crave one of those disgusting bean & cheese microwave burritos from 7-11 that I used to eat late at night when drunk after a concert.
In Japan there are equally disgusting items that I indulge in, because life isn’t meant for purity and snobbery. Bad food serves to remind us that good food is good.

Nice. but I hope that's not Aunt Bessie's Titchy Yorkshire Pudding I see there! I adore sprouts, just boiled until tender, with butter, salt and black pepper.
These are Yorkshire Puddings, made in my wife's great aunt's tins. I like to fill them with veggies and gravy from the roast beef, or fill em with boeuf bourguinon.

Oh goodness, I remember those so well! I used to work in 7-Eleven when they came over to London, in about 1985. I used to eat that sh1t almost every shift.
My junk craving is always Vesta Chow Mein with crispy noodles. Dried crap in a box. Army food.

If it's a big occasion, such as a family gathering when we were younger at Christmas etc, then my mother would have everything set out on the table in separate dishes, and we'd take what we wanted, and add it to our plate.
However, when you've plated up, and added gravy etc, then everything is on your plate. We don't eat it all from separate plates. It's not a Chinese banquet, it's a roast dinner.

We're cooking for two, not 12.
We do the same thing in Amerika, but the only ones with soup to nuts gravy coverage are the ones who sit at the ‘kids table’. That looks like Jonestown Gravy Massacre. 😂
So I get the two person dinner and the need to keep peace by not making extra dishes to wash, but Brussels sprouts deserve a separate plate. And I will die on that hill.
If I had been served that at your house as a guest, I’d happily devour every morsel, don’t get me wrong, but because I’ve never had an English pudding, I’d like it isolated from the vegetables in order to experience it on its own terms.

I don't live in the upper class like what you does guvnor. Round here plates are expensive. If we drop a plate one of us has to eat out of the pan.
We were once burgled. The tv was still there but the plates were gone. Probably smuggled over to some rich Japanese restaurant, so the fussy buggers can put everything on a separate plate.
