Do send me your recipe for tortilla Española. After 29 years of marriage I just can't bring myself to tell my wife that I don't like her tortillas (she thinks I just don't like tortillas españolas in general, but I do). If I can figure out what she's doing wrong, I might be able to correct this very serious problem. Phil

Tom, It's the bit between the wing and the claw! I'm pretty keen on cooking, so I try various things. So sometimes we have chicken wings done in a (homemade) spicy batter. I have recently experimented with pot roasting very cheap cuts of meat in a vegetable and wine broth. Result....Totally delicious!! Mind you,I have the luxury of having one of the finest bucher's shop in the UK, just 4 miles down the road from me. (Winner of various awards) so really anything from Charlie's is good stuff! http://www.mearns.org.uk/stonehaven/mchardy.htm All Aberdeen Angus, even the mince! But really, it's true. The most flavoursome part of the meat comes from the muscle that does the most work. Therefore Fillet Steak, Sirloin Steak has the least flavour but better texture, while Rump, Topside and Thick Rib etc have the most flavour, but you have to cook it slowly. (Sorry to disgust any Vegetarians here!)

Bland food can also be tasty food, Cornish pasties are superb but just flavoured with salt and pepper. Good food is never Hot, I bet there has never been a Mexican /Indian, restuarant, ever been awarded a Michilin star, not sure but doubt it, by the way near Barcelona there is a resturant been voted the best in the world, Gordon Ramseys in London was voted second, I must sound like food critique, but I never eat out, and most days just eat beens on toast, or tinned soup. Dave, you must never have had really good Indian food...it's an extraordinary cuisine, very varied, full of subtlety and poetry. A lot of spicy Mexican food is also wonderful as has been noted.
But I most admire Mediterranean cuisine, especially Turkish and Spanish, because it works wonders with simple fresh veggies and meat.

In defence of British food, you have never tried my mother's Roast Beef with Yorkshire pudding, hot pot, sheperd's pie, lava bread, roast pork in cider, and being Welsh she has a hundred and one leek recipes.
From what I saw in America everyoe eats hamburgers and pizzas, but that's what happens if you hang out at pizza hut and wendy's.
Next time in Spain if you want a god fresh salad, try ' cogollitos con ajo y nueces" This is small lettuce, like little Gems, which have been mixed into garlic and walnuts cooked in olive oil. Delicious. Also you can't go wrong with a tomato alinado, or marinaded tomatos. Spain is known as the garden of Europe and has an abundance of fresh fruit, beans, nuts and veggies. My mum's favourite is 'habas con jamon' which are small beans cooked with diced jamon. Estela will know how to make it, wonderful when the beans are new and tiny. Then there's gazpacho, so so good for you and definitely not fried :)

Your right Billyboy some bland food can also be tasty. Cornish pastires sound very good.

Funny...the original topic of this thread only made it to about a page and a half. Now we're almost on page 3 of food topics. I believe Melchor started it off with tortilla de Patatas.
Simon there is obviously a demand for this topic so how about a Spanish food section?

The restaurant is El Bulli, run by chef Ferran Adriá, and it *is* world-famous. Critics have likened it more to an art gallery or theater than a restaurant. There is no list of dishes, nor are you asked your preferences. You sit down and receive what the artiste-chef brings unto you. His specialty is using customary food in unusual ways, such as blue-cheese ice-cream, spaghetti and meatballs with the roles reversed, that is, the meat is minced and formed into spaghetti shape, and the pasta is made to look like meatballs... He plays with our visual and gustatory memory and does very surprising things. I've never been there...it's outrageously expensive.

Estele, Good Indian food is never hot, only for British Saturday night tastes, in fact Indian food never used chillies only black pepper to spice the dishes, chillies were a south American plant. Only used in the past half a century or more, in Indian cooking. Dave

Jurdo, I think to get a Micchilin star you have to apply, and there are certain credentials you have to have in your restuarant, I agrre though, there must be a lot of **** involved, and they are usually prohibitavley expensive. Dave

I don't know Dave...my only knowledge of real Indian food is from a Madhur Jaffrey video course, she's supposed to be very authentic. I can take the meanest hottest chile, but the dishes she made were HOT HOT HOT, plenty of peppercorns as well as a variety of chiles. I worked up such a tolerance, even now I add a little hot stuff to everything. I've also used small cans of curry paste imported from India...a can the diameter of a normal cookie would last for many months, that stuff is deadly.

Ive heard authentic Indian food is never hot, and if you go to India you would see this, dont know about Jeffry, some of those Pataks pastes especially the Korma are beutifull Dave

Again, the Indian restuarants are probably catering for American tastes, when I lived in C.A. Indian restuarants were thin on the ground, people generally thought mexican when thinking HOT food, I must admit I loved those silver Taco vans you used to see on street corners, those soft Tacos where superb. We were invited to a Vietnamese restaurant by some friends. We had a choice of French or Vietnamese so we tried Vietnamese as we had never had it before. Katy had a sliced pepper with seeds in her salad.
We were talking and I told Katy not to eat the pepper. My friend also told her not to eat it. Well, Katy ate the pepper and ended up in the emergency room of Good Samaritan Hospital in Los Gatos, California! She has permanent damage to her esophagus because of this one incident. She also must take medication daily to help ease the pain. This occurred about five years ago and I will never forget it!
