Next time in Spain if you want a god fresh salad, try ' cogollitos con ajo y nueces" This is small lettuce, like little Gems, which have been mixed into garlic and walnuts cooked in olive oil. Delicious. Also you can't go wrong with a tomato alinado, or marinaded tomatos. Spain is known as the garden of Europe and has an abundance of fresh fruit, beans, nuts and veggies. My mum's favourite is 'habas con jamon' which are small beans cooked with diced jamon. Estela will know how to make it, wonderful when the beans are new and tiny. Then there's gazpacho, so so good for you and definitely not fried :) Kate
