For sure--at least with guitars, which I am familiar with--the varnish affects the resonating properties. It's just not that important what it's made of. (Yes, I am saying that nitrocellulose lacquer sounds as good as shellac!) Moreover, I believe that on violins the wood is thicker, so the effect is diminished.
