Crazy.

That Head aside, it's so nice to see you all! I miss you and can't wait we all meet again.[:)]

Pimientito -> RE: Boars head (Jan. 18 2010 8:44:46)

Hey Matic. We miss you too. I'll make sure the house is a pig head free zone when you next come to Granada

So what are you making for us next week, Pim? We'll all be tuned in!

I think my next project will be to have a go at brewing mead...then I'm sure everyone would come round to try that out[:D]

Invite a few puellae and I'll be there.[;)]

- the ones from your area who 'adopt lascivious postures to the sound of the Baetic crotales'?

Yep. But let me tell you, if "lascivious" even crosses your mind for a second, their brothers and cousins will pick up on it right quick.[:D]

Fans of this thread will doubtless enjoy a brief revival. [;)]

The occasion? I was just listening to Miguel Angel Cortes's first album 'Patriarca' for the first time in quite a while, and heard a passage that reminded me of what Pigmientito (- thanks Deniz!) said:

quote:

Harold did in fact sing "piggies" by the Beatles which was quite appropriate.

and...damn, I can't put a sound clip here! To be continued over in the audio uploads section...

Here in Spain its still very easy to buy a pigs head or even a boars head from a market so I thought it might be an idea to try to recreate this delicacy....and its certainly not expensive.

In villages up in Cantabria they still go through the ritual when the slaughter an Iberian pig. The whole village parties.

I can't vouch for the authenticity of the information in this but it takes you through the basics. If you have success with the head you can buy the whole pig next time[8D]

Pimientito -> RE: Boars head (Mar. 1 2010 1:25:27)

I have accidentally been present at a couple of mantazas. The article describes the process over a couple of days. My experience was that the whole thing was very quick. The process went from Live pig to 90 kg of butchered meat in about an hour and a half. It was incredibly skilled. The mothers boiled huge vats of water. After the pig had been killed, it was covered in boiling water which presumably disinfected it to a degree and allowed all the hairs to be removed with a flat blade.

Nowadays, the actual act of sacrificing the pig has to be carried out in the abattoir under strictly controlled conditions

Yeah right...Although that's the law many people still kill their own pig. It was surprisingly quick. I would say that the stress of transporting live animals in the Spanish sun and then making them wait in pens to be slaughtered in an environment that smells of death is probably more inhumane than quickly dispatching the animal at home...but that's just my opinion.
