I have accidentally been present at a couple of mantazas. The article describes the process over a couple of days. My experience was that the whole thing was very quick. The process went from Live pig to 90 kg of butchered meat in about an hour and a half. It was incredibly skilled. The mothers boiled huge vats of water. After the pig had been killed, it was covered in boiling water which presumably disinfected it to a degree and allowed all the hairs to be removed with a flat blade. quote:

It was surprisingly quick. I would say that the stress of transporting live animals in the Spanish sun and then making them wait in pens to be slaughtered in an environment that smells of death is probably more inhumane than quickly dispatching the animal at home...but that's just my opinion.
