I'm watching progress in rather horrified silence here, although I do eat the flesh of dead animals, I'm a bit squeamish about handling them.

Just catching up - wow, you did a lot of work while I was sleeping, and the head's in the oven by now.

You're doing an amazing job of keeping us informed, I can't imagine cooking a normal dish and writing at the same time, it's a great service of information and entertainment to the Off-Topic community (although, as Kate said, mu flamenco). Even better than Floyd on Spain.

Pimientito you remind me of an Arabic music concert we went to recently where the qanun-player/leader introduced the singer/drummer saying "He's completely insane.....but beautifool!" [:D]

So to keep you up to date, I took the head out after 90 minutes (more than 1 glass of wine I hasten to add). It was cooking too fast so I put some bacon strips on it in the first 10 minutes. This is how it looked after 90 minutes

Now to make it crispy. Mix up some English mustard and water in a cup to the consistency of a thick smooth paste

Baste the whole head in mustard and then cover it all in honey. Remove the foil from the ears and put it back in the oven for another 90 minutes. Remove the head every 20 minutes and keep basting with the juices and mix of honey and mustard.
A 5 kg head requires 4o minutes per kilo which makes 200 minute cooking time or 3 hours and 20 minutes.

Its so strange.... right after I wrote that boars head is odd,... I laid down on my sofa watching a TV-broadcast... The issue was... "strange old fashioned german food"... [&:][&:][&:] I cant believe that. And guess what they showed?
They ate the meat from a pighead...., fried bugs, Blood-soup and udder-schnitzel... Im shocked...[:@][:'(][:o][X(][&o]..... eeeeh... Go on with the boars head... Im silenced by my television.. [&:][&:]
They said to the blood-soup and the pighead that it was a typical thing at the time before and after the 2nd world war, because they had not much to eat...so they ate everything...

Hmmm...that carving photo is a bit worrying!!!

Well to finish off the thread here is the the finished head now after several bastings and a further 100 minutes in the oven. It should now be a golden brown, crispy and smelling pretty good.

My dog did. I have a dog who was extremely glad of all the fatty bits. I think she will be eating pigs head for the rest of the week

I watched the whole weekend 3 seasons of the series "Dexter", and that was the first thing what came to my mind when I saw the boars head.
