I dont think that they rattle. But the idea could work. I had a guitar with 12hole system. And there was a big difference between playing it using the extraholes or normal. So I think its a nice invention but looks a bit too much gay IMO.
Seems like over-kill. Tie a knot in the end of the string and thread through the hole - does the same thing. It's still not the same as the 12-hole variety because the string is not really tied to the bridge. Norman

I think its not the end of the string that add's response and brightness but the angle the string makes over the saddle. Without the loop that pulls the string a little upwards the angle gets sharper.
For one of my guitars I have tied a knot in the strings instead of looping over the tie block. This was done to reduce tension which tying adds, even normal tension strings felt tight on it but are softer without the tie. Don't worry about the break angle, my most awesome flamencos with great bass have very little break angle, and others with steep break angles are disappointing.
