I aim for a target stiffness of the back by flexing it with my thumbs just as I do the top. The thickness will vary with the type and properties of the wood you're using. I'll take Rosewood as thin as 1.8 - 1.9 mm sometimes, Cypress sometimes as thick as 2.5 mm. I'd say average would be about 2.0 for EIR and 2.2 for Cypress, usually a bit thinner at the edges.
