I don't have a cat but I was thinking of getting one. I have been allergic to them in the past, but I seem to be getting over it. What is holding me back is the thought of getting an animal "neutered." I hate that idea, but I understand they are better to be around indoors if they are.
The maple i use for building is european maple and its tough to cut. And especially if you use highly figured wood , where the grain goes everywhere. If you do the soundboard after the back, be carefull, because its like cutting warm butter compared to the maple and you easily cut away to much
Neutering dogs and cats. Dont compare the s*x life of human beings with that of dogs and cats. They are dogs and cats and everything work differently.
When neutered, they have a much more quiet life with less stress. And you as well, female dogs are a lot less prone to different disseases like breast cancer etc when neutered.
My dogs dont care about power tools. They sleep when they are in the workshop. Like John, I also prefer the bigger cats, they are less nervous. But if you get a Main-coone (spell) or a Norwegian forest cat, you may find out that it prefers to be outside most of the time.

In view of allergy, consider that the brighter the color the less allergic you will be. It has turned out that black cats have the most of allergene in their saliva.
Correspondingly, ( to their own amazement) not a single allergy sufferer reacted to the completely white persian cat I used to have. Even if it jumped on their lap to sniff out their faces or to cuddle, no allergic reaction.
Cats should only be strenuous for as long as they are still young and silly / learning. Up from the age of 9 months or so ( when the brain has fully developed) they start observing and understanding you very well. And provided they love you they will go out of their way only to avoid annoying you. In fact, loving cats are extremely considerate. So much even that they will even rest typical cat behaviour for you, if needed. ( I did not want to see cats on tables or shelves, and they would completely correspond without any large-scaled teaching. Or they would withhold when visitors in the house, only because of knowing that I like to concentrate on the people.)
Regarding noise, their hearing is so extremely sharp. They can hear things like mice running under ground or current in the wall socket. And they certainly appreciate when you are considerate ( avoiding noises like say trample or slamming lids of potts in the kitchen, etc.).
In the same time they can be highly tolerant to noises inevitable while wanting to stay near you ( or to a warm oven or such). They can apparently set different tresholds for familiar acoustics.
Hence you will see cats who will be firmly sleeping in extremely loud places like metal working shops, etc. only to suddenly jump up and run after a mouse if it passes under the locker.
If you care well for it, prepare yourself for long years of compagnionship. Big cats will not get much older than ~ 13-15 years, small to middle-sized ones up to over 20. ( Oldest proven house cat was 35 years old.)
My pretty large white Persian got well over 20, my Maine coon 16.
There is not so much in life as hard to overcome like the passing of a cat that got old with you. It is a connection and refined familiarity beyond words.
My maine coon passed April last year and I am still not over it.
If you like quiet and meditating over work pieces, cats are your perfect mates.
