What is a Zapateado? 

What is a Zapateado? I hear people play them, but don't really know what they
are.

The word means footwork. In the "old school" it was a simple motif to accompany a footwork section in compound time.
Zapateado is usually played in 6/8 so you are counting 6's when you play it which is different from the buleria. In fact you could almost think of Zapateado as a simplified buleria - I'm going to get jumped on for that comment because it ISN'T buleria but it is useful to think in 6's at times.
Now of course its been turned into complex compositions and its not always easy to hear the beat in a modern solo. Check out Zapateados by Manolo sanlucar and Esteban sanlucar which are classics.
