Bulerias in 6

What are the most common ways of keeping time with your foot when playing bulerias in 6?

tapping in 3s....12 3 6 9 12 or simply 12 3

or tapping in 2s fits easily 12 2 4 6 etc

The famous video of Moraito. Whenever he plays falseta he taps his foot in 2s in 3/4 time.

Is that also normally the best way to count medio compás in a 12 beat bulerias?

Yes it is easy to feel however one caveat. Because you are repeating 6s after a while you may know know where you are in terms of twelve beats. Guitarist from Jerez dont worry about it and just finish with a half compas.
So if you are following a singer or dancer or solo compas machine. You can do the normal 6 to 10 ending. Starting on 6 or starting on 12.
