I prefer the chunky type fish with a medium texture; softer than Tako and firmer than Uni. The first time I saw my wife eating Tobiko, I freaked-out. They look and smell the same as Plotzky's Fish Eggs, which are fish bait for freshwater fish, such as trout. I learned that it is for fishing, not human consumption. The best Maguro I ever had was in a small chain cafe on the first floor of Saty supermarket.

I liked Jiro's commitment, but he was over the top expecting his sons to carry on; My number one son is 65 and he has been making sushi for fifty years under my thumb and he is perhaps not ready to be in his own when I die. And he will not be able to do sushi as well as I do..blah...blah,........... but other than that I found it intriguing.
It was awesome he kept wearing a black turtle neck. I called him the Steve Jobs of sushi.
