I have seen several Hermann Hauser II guitars (and only his) both in person and in photos, where the tuners, nuts, and "bone" saddle all were this weird yellow color. I have been told by some that it was "ivory" and others a special kind of plastic that over time changed from white to yellow. Anybody know anything about that material and what's up with that?

The material might possibly be a milk protein-based plastic known as galalith, aka French bakelite and in the UK as Erinoid.
It was once used for many applications including jewelery, pens, umbrella handles and piano keys.
It's not encountered very much these days.

It is a very striking odd yellow orange color. Anyway I got a private message from Brune that it was indeed plastic. He said the plastic saddles he changed out for bone for customers, improved the sound greatly.
