Cante Jondo in Andalucia

I was talking to my teacher about my intention to go to Jerez for the flamenco festival next year 2012. He told me that the festivals I would enjoy more (from what I told him) are the smaller juergas where it is primarily guitar and cante rather than dance and ensemble. How does one hear about these festivals, the Cante Jondo? We agreed that one can just as easily go to The Barbican to see a fully fledged ensemble.
