The mock studio session is a pretty good theory and would be in keeping with the staged realism that characterizes much of the series. quote:

It’s really piqued my interest in learning more. I’d never really picked up on the subtext on the comments about Canastera, and wouldn’t have if you hadn’t pointed it out- too subtle and insidery, but I just rewatched it today and I see what you’re talking about. That episode was aired smack dab in the middle of Camaron and PDL’s career defining collaboration, so it’s interesting that Cepero is the featured accompanist. I wonder if this was an accidental, Paco-was-out-of-town sort of thing, or if using Cepero was a deliberate choice on someone’s part?.........
