As has been said, the man hours are not so long but the guitar needs a lot of time to 'gas out' as it was put. If you do it too quick then the grain just sinks and looks bad later on. The longer the better, taking time, 6 months would be great!
I polish as many guitars as I have ready, usually 2 at a time but sometimes I make a trio of guitars, sometimes only one, depends how I feel. (3 is best really to be efficient and in touch with each guitar, more than that gets confusing)

I used to do 3 at a time, but it was to boring when it came to final sanding, so now I prepare wood for 4 guitars and assemble 2 at a time. Very nice rythm.

I've wondered if there's any notable differences between sprayed shellac and the french polished kind.
