what to do around jerez

im going to be in jerez for a week after the course with gerardo nunez, so any recommendations on things to see that are not usually listed on the websites?

im definitely going to the catedra de flamencologia, and taking lessons with el carbonero as well

Or could take the train down to Cadiz for the day for some sea air and fried fish.
