Obviously letras are going to vary city to city in fiesta situations. EG These are more common here, and those are more common there, with some overlap of course. Are there "tablao letras" or "album letras" vs. "fiesta letras"??? Is what is sung in tablao's just the most popular letras from varying cities? I guess my questions isn't specifically bulerias but that's what I had in my head......
Speaking of cante, Norman hasn't been on since the 11/30/13, what happened on Halloween???

I don't know the answer to your question but I'd like to. Aficionado singers I know seem to choose letras from all over the place. Of course there are local letras mentioning a particular town or local geography but even these are sung out of location. I found playing in Triana accompanying someone singing about Triana did feel good though, the energy in the room went up at those points!

That's awesome!
I watched the Fiesta Buleria episode of rito and I felt like the letras almost followed a different maybe more fluid form, then the stuff I hear in youtube tablao videos and albums I have......or like, less lines per letra, or less words per line, I dunno, it just felt a little different.

Maybe better phrased like this. Are there letras more often played with baile, like tablao baile not fiesta baile. And letras more just meant for fiesta/cante situations????

While we wait for someone with proper knowledge (Ricardo, Solea1, Estella, Morante, Norman?) here's my understanding;
Can be the same letras but sung differently. Letras are sung much more compact and square for tablao baile, it's a more organised situation. In a fiesta/juegra there's more liberty to stretch out lines take time between phrases etc.. People get up and dance if they feel like it.

Let's put it this way. There doesn't need to be any difference. The best thing for dancing in a tablao will be your typical jerez fiesta buleria (ie, short and sweet so dancers can't indulge themselves and get off stage quicker). Like in the Flamenco movie start and the Flamenco Flamenco movie end. If nobody is dancing, everything and anything goes. Then finally some nerd dancers can choreograph something all together for a tablao or theatre show in which case specific letras may be required.

A not so experienced dancer would expect a given number of compases for one letra no? It seems they expect 11 compases for an Algerias letra, I played a letra I learned that was 9 once and this dancer was like "That's short!" I had to show her the letra on YouTube and she was like " Oh, well they're just being tricky cus that's short." I said whatever and did the 11 compas letras I knew.

Student dancers usually learn chroregraphy and can then think that there is a correct length for a copla (in any palo). Often alegrias is eleven compas but it's not a rule. One doesn't need to be an expert to know this, just listen to some cante (especially older) and it's clear that it's open to variation and personal expression of the singer.
Cante is now often in the service of baile rather than the other way around. Others have expressed this is leading to a dimise in creativity for new cante and loss of old cantes because everyone has to sing square and to a number of compas prescribed by the baile.
However (as you seem to know) the guitar is always in service of whoever is in charge i.e. the singer or the dancer! So you'll have to do what she asks!
Esperanza sings mainly eleven compas but for example there's a remate after first line in second copla.
