I use a water based brushed, acrylic/poly lacquer. Its very good, safe, easy to apply and some customers prefer it because it doesn't wear like French Polish.
They are available from various manufacturers, just experiment to find the one you like.
The trick, as with any finish, is to is to apply it thin, probably easier with spray equipment. I've always used a brush, its low tech and I prefer to work this way.

The only issue is how to apply colour. Shellac comes in a range of shades but these laquers are very clear so you will also need to experiment with dyes to get deeper shades if thats what you want.

Thank you Kevin. Is there a particular brand you like?

Yes my favourite is Polyacrylic gloss from General Finishes. Its a US brand so you should be able to get it ok. I've tried various others including the Stewmac finishes and some were very dissapointing, milky, plastic, and dificult to to make a high gloss. But General Finishes products are good. They have other options you might consider too
