Hi,
you could try out some estudios from the (?) Manuel Granados book.
There are many for two finger and three finger combinations.
The good thing about the estudio is that its a real exercise, which at the same time sounds like music.

Pepe Habichuelas Granaina from the album "A Mandali" is nearly all arpeggio.

Old school you have lots of nice falsetas of N. Ricardo por Alegrias. IMpetu by Escudero and some passages of Guajiras de Lucia are very good work outs. More modern, you have Nuñez that has many compositions that are mainly arps. Try his Vals buleria (Sevilla) or Trafalgar.
