I like the Kodak Zi8 - you can shoot several formats up to 1080p, and you can use an external mic if you want. I've used mine with the built in mic for lessons and it works great with totally decent sound. This is an older model now, so you should be able to grab one cheap.

I am very happy with the Sony PCM M10. After years of wrestling with MiniDisc (DRM restrictions, lengthy transfer to my harddisc, etc.), I now have a great aid for recalling lessons.
Although I must say that, having the Iphone video at my direct disposal, I now come to rely more and more on the video rather than audio recording of my lessons.
This sony machine has incredible battery efficiency (2xAA - 50 hours of recording!), huge memory (4 Gb internal memory and additional memory with flashcard), no nonsense click 'n drag transfer to computer with just a usb connection.
And...playback with a slowdown/retain pitch feature that let's me listen to a bulerias in sequiriya tempo. Not just for my own recordings but also of other music files that one can drag to its memory.

I have the Zoom Q3HD... it's an amazing little piece of gear! Sound quality is excellent with two condenser mics and the video quality is more than adequate. It's forte is really the sound. I have posted some sample video somewhere in this forum... just search 'Zoom Q3HD' and you should find it. Sells for around USD 300, but you can look for deals and grab it for around USD 250... a bit expensive but it serves it's purpose.

I have the Zoom H2. It's a pretty good piece, but I think the audio quality could be better. It's definitely better than any camcorder microphone, and you can use it as a USB microphone on your computer. I got mine used, but for the price of a new one, I'd probably get the Zoom Q3. They're almost the same price on Amazon, I think. The Q3 uses condenser microphones, whereas the H2 doesn't (it does have 4 mic's but for basic recording purposes, who cares...). Plus, the Q3 has video too, but I've read it's not that good for video. Still, I'd choose it over the H2 just for the condenser mic's.
