Its not a soundhole but pickup EQ controls etc for RMC pickup. Here is a similar one for Godin. I personally wont do that to an A26 Conde but I'm sure Diego has plenty of Condes to mess around with as these are dime a dozen especially in España.
You can see on the video that the saddle is not bone but individual brass saddle specific to RMC pickups. Goes to show a pickup installed doesn't affect the sound of a guitar acoustically.

I think it's likely Paquete's guitar he is playing here because he always plays a guitar like this with the same rosette in pics and vids and I've never seen anyone else with this feature on a Conde. More recently, you can see a signature to the left of it, too, so this Diego video could be an older one. That said, I always thought that this was drawn on with black marker by someone with a sense of humour because the figures didn't look quite right, but maybe it's the presence of those little switches in different places which was fooling my vision. And I think it is hard to see in the video but Don may be right about the individual saddles. Plus, Paquete definitely uses some sort of pickup because I can see a chord going to an input jack in the side of his guitar in another video. So I guess Don is right, no surprise!
