While in Ronda during May, 2007 we enjoyed the show in the basement of the Museo Lara in Ronda. http://www.museolara.org/ It was an enjoyable fairly traditional performance in nice surroundings. In 2009 a new flamenco club was inaugurated in Ronda. http://tinyurl.com/3j9xq9y I haven't been there, so I can't comment, but you might give it a try. Sadly the Restaurant Pedro Romero, across the street from from the bull ring, has changed from its pleasant ambiance of 20 years ago to processing busloads of tourists. The Hotel Reina Victoria, now a bit worn, still has its commanding views. The Parador, formerly the city hall, could be even better. The scene in Hemingway's novel where the members of the Fascist city government are made to jump into a deep gorge to their deaths, actually took place at the city hall of Ronda. RNJ
