Farruca = 162bpm? That's one beat per eighth though, right? So cut it in half for 4/4. I don't think there's a "perfect speed" though unless you want all the other musicians and dancers to play and dance at the same perfect speed. A range is better. Slow palos like soleares, siguiriyas, farruca, tientos etc. can get down to 60bpm, it's good to practice at that speed because you have more time to fill, it's easier to get lost in the compás and some falsetas won't work at that speed. I do 60-100 for slow (solea, farruca), 100-160 for medium (tango, alegria, fandango, sevillana, solxbul, columbiana, guajira), 200-220 for bulerias. Always having the metronome support you on every beat isn't always good, try cutting the beats in half once then twice, meaning try playing farruca with the metronome on 40 then on 20 and see if you can meet with the metronome every second and every fourth beat. Also to practice keeping a stable beat you can start the metronome and pretend IT'S in contra with YOU playing the main beats. Confusing at first but once you get the hang of it it does a lot of good.
