What kind of flamenco (or music in general) do you already know and enjoy listening to?
Off the top of my head, try Almoraima by Paco de Lucia for instrumental, or 'Canto' by El Pele and Vicente Amigo for a singer that doesn't burn you arm-hairs off (you need to build up to that).
Some other more mainstream classics are Camaron de la Isla, and Moraito.
