Maybe you know this allready but I use the "ScarySharp" system, here is a link to a page about sharpening and on the page is the link to the original story of the scarysharp system. http://www.hocktools.com/sharpen.htm

Its a funny story the way he writes and I tried it and it works. But a pro might want to use diamont stones or what ever.

Sharpening is a necessary evil. I hate doing it but it's essential to have sharp tools. I'm always looking for the 'best' way of doing this.

tom, when you use a stone, wipe the gunk off every 4 passses. otherwise you will end up polishing your stone or grinder and it wont sharpen as well.

also keep a chef's kitchen steel on hand to use before you make a cut, it will keep the fibers of the blades standing up, this will greatly improve your blades longevity, and your ability to cut will be better between sharpenings.

I have no problems sharpening with stones. This is my method. Just would like to know the alternative methods from some of the other guys.

I was reading about this 'ScarySharp' method and I am very interested in it. I think I'm going to give it a shot.

I use three diamond stones (I have a box full of japanese water stones but haven't used them for years, lazy I guess...), three different honing guides of which the Veritas is used 98 % of the time. I also use a Tormek 2006 sharpening machine with a wet stone and a leather honing wheel. Handy at the bench I have a leather strop.
