I found this site with an incredible interactive guide to arranging for bigband/jazzensemble. It handles the first five chapters, but in the end there will be 20.
Caution: Basic classical harmonisation knowledge required.[;)]
There's a course on classical orchetration too ( the complete, famous rimsky-korsakov book with soundsamples on every score excerpt )
Sorry for not being flamenco[:(], but after my quest for some useful arranging literature, I had to put my tongue back in my mouth after discovering this.
