There's a very interesting looking new book and CD out called "Understanding Flamenco". You can check it out at Flamenco-World: http://flamenco-world.com/magazine/about/faustino/faustino30122003.htm
The explanations are recorded on the CD. You can listen to a sample. I think this might be worth buying.

There's another book/CD combo called 'Cante por Cante' which explains and demonstrates the various differences between the cantes. The Spanish version is available now and the English is in progress. There's a link at the bottom of the 'Understanding Flamenco' page.
