I've bought a couple of DVDs for Flamenco: Juan Martin and Aaron Gilmartin, but I can't seem to find anything that shows the different rasqueos. Are there any instructional DVDs that go over the various way to strum in detail?

Try the graf martinez method- it explains the basic 3/4 finger ragueado clearly with pictures. There's also a DVD that accompanies the book.
