Is there a functional difference/advantage to square string channels in the head? Or is it an aesthetic choice?

Maybe just the difference between German hard lines and Italian elegant curves.

As Stephen said. Nothing structural.
Back in time squared slots used to be not unknown: it comes to my mind Panormo but Torres as well.
Hauser I headstock with the squared slots, the V joint and precise curves was the German version of the Torres headstock and probably the most famous, I’d say.

The square slots are kind of fun to make with an Uber sharp chisel. I went to cutting them with a half round gouge and finishing with sandpaper glued around a dowel. That’s fun too.

Which way is more fun?

On aesthetic terms the thing I’d say is the square string ramp feels out of place on a headstock design with a
Lot of curvy shapes, why make a curvy thing and cut rectilinear ramps in it?
In the end it just depends on how the person that made the guitar can blend all the design elements together into pleasing whole.

Out of eighteen guitars I’ve only made two without pegs. The fist was my #2 and rounded slots on both ends, it looks like 💩

The second one, #14 I think, I used the square ramps down to a rounded slot on the nut end and round one the outer end of the slot. I think it looks pleasing with my inverted Torres tombstone headstock.

Photo is at an angle so it looks odd, it’s not that flat but with a bit of taper.
