Hi Daryl, I don’t know if you’re building or buying, but it’s done a little differently for flamencos. Generally two measurements are taken: string height at the saddle, which can run between 7.5 - 8.5 mm, although there will be outliers, and string height at the 12th fret, at which 2.8mm to 3.0mm is a good middle ground although, depending on the player, it can go a little higher or lower. Generally not much more than 3.2mm on the high side and 2.5mm on the low.
