Obviously there are some exceptions, but if you watch videos of Diego del Morao, Dani de Moron etc performing live it seems like they use a different guitar for every show. Is there a reason for this other than just mixing things up?

I think the main reason is that they don't buy the guitars, those are gifts from the luthiers. If they like the guitars and play them live it's the best publicity the luthiers can have. For example, this particular video skyrocketed Graciliano Perez's business and Vicente doesn't even play live with his guitars:

Listening on a phone so maybe not fair, but that is by far the worst sounding guitar I've heard Vicente play.

Vicente used it to record the album “Tierra” with good results.
Many pro-players favour Graciliano’s guitars, so he cannot be bad.
Coming back to Vicente, in live situations he almost always plays his Reyes but seldom his signature guitar (Paco Navarro) with a Carlos pre-amp.
I’d say Rey, Amigo, Tomatito, Nunez, del Morao are quite faithful to certain instruments for their live performances too.
Often on YouTube you may bump into old videos, not representative of the actual set up.
Tomatito, for instance played Conde for years but he passed to Reyes for at least the last ten years.

Given a certain set-up, sometime a pro-player may have a specific reason for using a different guitar in a certain occasion (they don’t want to put at risk their main guitar, the amplification of the specific environment suggests for a different guitar, their main guitar is having some kind of maintenance, a certain guitar may have a better pulsacion/projection or else for that show or they just want to try something different on occasion).
