Seal the bridge before gluing it onto the guitar. Only the show side, not the glue side. I use shellac from a spray can to do this; it gets down in the valley nicely and if you spray very little on for the first coat, you can avoid bleed from the wood onto the bone.
For the rest of the guitar, seal the bindings before anything else, and do it like this: Put shellac solution on a small piece of folded cloth and pull it along the binding without straying onto the side or top (or back). Do one pass like that and then throw away the small piece of cloth. So you will be using a new cloth for each length of binding. If you want more passes, use a fresh piece of cloth each time. And don't get the cloths too wet or you may get padouk-colored runs.
It is very helpful to have purflings as a buffer between the bindings and top, back, or sides.
I recommend a vacuum cleaner with a soft brush attachment to remove sanding dust.
