I'm looking to get real good low action for some of my guitars, is there a specific height that the bridge should be, for example 1.5mm? (above the 12th fret, etc)
Or is there an easier method, such as an online shop for flamenco bridges saddles?

Lot's of discussion on this. A lot depends on the neck angle set up. My "goldilocks" guitar set up is 7mm at the bridge (strings to top!!) and 3mm 12th fret (no capo 1mm nut string to fingerboard), I have a bunch of guitars and only one is exactly set like this. At one point I plotted a chart with my guitars and was surprised how much variation I allowed for different guitars yet they all felt more or less just fine. One guitar even had as high as 4mm at the 12th and was a joy to play.

As Ricardo says a lot depends on the guitar, neck geometry, scale length, stiffness and also tension of the strings.

This is how I set up my flamenco guitars, with a 660mm scale length and normal tension strings

At the bridge; 7/8mm (measured from the underside of the strings to the soundboard)
At the 12th fret: 2.5/3.0mm (measured from the underside of the strings to the fret)
At the nut: 0.45/0.6mm (measured from the underside of the string to the fret)

This setup suits my guitars, but other luthiers will do it a bit different.
