Think I found the answer:

He's very fond of IAI, which I recall Ricardo saying is a very Jerez thing. The long roll at the beginning of the Rondena on Morao Y Oro is done this way IIRC.

You were right first time, its PAI.

..and Alameda Vieja IS the Rondena on Morao Y Oro.

Thanks for the confirmation / correction.
I can't believe how fast, even and loud he played that.
I really love this tune, I am going to start working on it.
Way above my level of course but I can try.
Found out it uses E tuned down to D and G down to F#
There is good tutorial on Youtube for the tremolo part.
