What hide glue gram strength is used for bridge vs soundboard bracing, kerfing ? Will 192 gram hold the bridge secure ?

Grade 192 seems to be the preferred grade for violins and instrument making and repair in general. Higher grades require more water to dilute, which in turn may not make it any stronger.
