Looking up flamenco guitar resources, I found this video (not flamenco) of
a guitar player placing his Iphone in his guitar....really neat video.
It would be interesting to try this with a flamenco guitar!

While it looks cool, all you're seeing is artifacts of the digital image capture process - it doesn't represent what is actually happening to the strings. And although this might be the first time you've seen it, there are many YouTube videos going back many years which exhibit these artifacts. The comments on that video are for the most part so ignorant it makes me want to cry.

timoteo is correct. You're seeing rolling shutter here. The sensor cannot process this kind of movement fast enough, so in each frame the string has moved on whilst the sensor is still processing, line by line, the previous frame and when you put them together, you get this effect.

The sensor is always trying to catch up with the moving image, so you get this 'bending' between frames. You can see it in a plane propeller.



Whilst the effect is related to the frequency of the strings, they don't actually look like that, so the use of such videos is moot. You would need a specialised camera/strobe set up that captures a whole frame at a time to do it justice.
