this may vary from person to person. A good way to get a rough estimate is to make to small blocks and make them both a cirtain thickness say 6.5mm in my case (these represent the finger board thickness). Place the blocks on the neck on at the nut and one just before the 12th fret. Using a straight edge placed over the top of them you can see where the plane of the finger board extends to over the sound board at that thickness(6.5mm). For an action of 3mm basses and 2.5 mm trebles (12 fret) and the strings 9mm-8mm at the saddle the height should be 3mm on the bass side and 4mm on the treble side (at the point of the saddle). I hope you understand that I'm not great at explaining things it always easier to show.
