I am in the market for one of these 3 models. Other than quality of wood and finishing, is there a major difference in the models in regards to tone?
Is it work it to pay 2x or 3x for the higher models versus the 2f?

I became recently a big fan of the Sanchis Lopez, since I bought a Sanchis Carpio Bulerias that plays to my ears like an old Conde. The setting is a little odd but the sound is very good.

I think the 2f, which is probably the equivalent of the new model called "solea" was the 3f some years ago.
One of the 2 Sanchis brothers (David I think) told a fiend of mine that the 3f was not profitable anymore for them as they earned few money with it and many people went for it instead of the 2f as there was not a consistent difference between the 2 guitars in terms of sound.
Therefore they decided to improve it a little the entry level guitar and call it 2f and Solea then.
IMHO sometimes you can find 2f quite good but rarely as good as a 1f extra or a Bulerias.
The problem is that they use a stiff top and light bracing and as a consequence the quality of the top makes huge difference. The best are those whit a floppier top.
The 1f extra has also a different bracing pattern.
My suggestion is to go for a 1f extra or a Bulerias and to buy it from people like mundo flamenco as the owner select personally the guitars.
The bulerias are quite dark sounding and not very snappy as they are made with Pau ferro (or caviuna) a huge plantilla and a bracing similar to that of Faustino Conde.
Another plus of the 1f extra is that recently they use to insert carbon rods for a thinner neck. The neck of the 2f (and the old Sanchis like mine) being quite beefy is not as comfortable as the new 1f extra
