Hi, I'd like to know when is it time for a refretting job. What should I look for on the frets, like how bad and how common an indentation from the string or what? And what frets should I choose for best playability/tone? I remember reading that there are different heights. How do I measure the ones on my guitar and what does everyone recommend? Thanks!

In my opinion you shouldn't rush to refret until you have explored other possibilites. Frets with minor wear (or lousy fret jobs on new cheap and sometimes not so cheap guitars) might be made better by being re-crowned and polished.
When you have wear that affects your playing and possibly small wear depressions in the ebony fingerboard a re-fret is worthwhile. Problems with the fingerboard can be planed out while the frets are off and if there is plenty of thickess of ebony left you could also take the opportunity to sort out minor problems of raised action that have developed over the years. This is a job for someone who understands flamenco guitars.
I would use the same gauge fretwire as the original unless you have a really good reason for change - respect the original luthier!
