Lower saddle is more comfortable on the right hand for rhythm. Both guitars might feel similar on the left hand. The first guitar is more “correct” in terms of how it was constructed via the neck angle.

You know about the “Cigarette under the strings by the saddle concept”? That’s the first guitar.

In Spain, the Gitanos used to check the action at the bridge before trying a new flamenco guitar, by placing a cigarette under the strings and making sure it doesn’t roll freely but gets wedged under there. Setting up the neck angle to that precision while maintaining a clean sound over the fingerboard (not too buzzy), turns out to be a challenge for luthiers that make flamenco guitars vs classical ones.
