Dennis Koster playing Granainas/Zambra 

You just have to love the part at 9.22.[:D

My very first guitar teacher had the habit of doing that if he felt he was out of tune. Right hand would just keep on going while he'd tune a string with the left.

Quite frankly, wouldn’t that be the obvious thing to do piwin? No? The difference here is that Dennis is employing theatrics.

It would be if only I knew how to do it! I seem to have to stop or keep on out of tune until there's a slow section or something.

Yeah I feel like most pro's keep their left hand and reach over with the right to tune.
I stop, take off the capo, take out my iPhone, open the tuning app, tune, put the guitar between my legs facing me to get the capo on, then, voila! I'm right where I left off! Much more theatrical and much more accurate.

The first time I saw Sabicas (which, IIRC, was at the QEH in 1968), I was confounded by the fact that I had never noticed him changing tuning. Watching more carefully, I saw that when he got up to bow, he rested the guitar on his feet, with his left-hand thumb behind the neck at the nut, his L.H. fingers quietly plucking the strings, and his right hand on the tuners.

By the time he sat down again, he’d unostentatiously changed tuning.

I actually remember going to see Sabicas live at his first solo concert at Town Hall in 1959. He did one of the most amazing and fastest picado runs I've ever seen. I never forget that during that run, one of the strings was kind of out of tune and he quickly tuned it back with his left hand while his right hand kept going like a machine gun. But somehow all the required notes were played perfectly man. No theatrics involved there but to this day I'm still trying to figure out how the hell did he pull it off in that manner.
