It could be reversible, and if the humidity has changed so drastically there is a good chance that it is. It could also be that the neck has warped irreversibly.

If it is a reversible seasonal problem, a solution might be to have two saddles, if there is room to use one that is lower during the dry season. For a 0.5-mm change at the 12th fret, a 1.0-mm change at the saddle should counter it.
