Can I make the back from many pieces... 

Will this cause a risk on the strength of the body?

It is not so unusual for the back to be made of 3 or 4 pieces on a Spanish style guitar. The joints need to be reinforced on the inside, just as the joint on a 2-piece back does, with a narrow and thin back strip preferably with the grain running perpendicular to the grain of the back. Done like this, with tightly-fitting joints all around, it should not compromise the strength of the back.

I've seen guitars with multi piece backs including over 6 and more.

Yeah sure. Even the top can be made of many pieces.

I think the reinforcement is usually there if you use veneers in the back join as the split easily. There are many builders who don't use the reinforcement if they are not using veneers. Then again I'm sure it can't hurt. I still put one in and rarely use veneers.

But I think the stripey sides had to be done by gluing up several layers of veneer; if several thick pieces were edge joined for the sides and then subjected to the heat and moisture required to bend them, the joints would come undone.
