Hey Stu, outside of the flamenco realm I'd recommend pretty much anything by Don Ross, Michael Hedges, Antoine Dufour and Andy McKee.

Examples:

Specifically, I'd suggest:

Don Ross - Passion Session, Huron Street
Antoine Dufour - Existence, Convergences
Andy McKee - Gates of Gnomeria, Joyland
Michael Hedges - Beyond Boundaries (guitar solos)

I figured that might have been the case, but thought I'd take a chance and post em up anyway - if you haven't heard these guys, they're worth checking out anyway!

Also, Juan Carmona's "El Sentido del Aire" is really good.
And Javier Patino's "Media Vida" which came out last year.
