The occasion? I was just listening to Miguel Angel Cortes's first album 'Patriarca' for the first time in quite a while, and heard a passage that reminded me of what Pigmientito (- thanks Deniz!) said:

In villages up in Cantabria they still go through the ritual when the slaughter an Iberian pig. The whole village parties.

I can't vouch for the authenticity of the information in this but it takes you through the basics. If you have success with the head you can buy the whole pig next time

I have accidentally been present at a couple of mantazas. The article describes the process over a couple of days. My experience was that the whole thing was very quick. The process went from Live pig to 90 kg of butchered meat in about an hour and a half. It was incredibly skilled. The mothers boiled huge vats of water. After the pig had been killed, it was covered in boiling water which presumably disinfected it to a degree and allowed all the hairs to be removed with a flat blade.

Yeah right...Although that's the law many people still kill their own pig. It was surprisingly quick. I would say that the stress of transporting live animals in the Spanish sun and then making them wait in pens to be slaughtered in an environment that smells of death is probably more inhumane than quickly dispatching the animal at home...but that's just my opinion.
