Visiting Andalucia

Hi all, Hope this finds you well. I'll be visiting Andalucia in June with two of my friends. Not only are we flamenco fanatics, but we're also immensely interested in the surrounding land and culture. We want to avoid the major tourist hubs (e.g., Malaga), but we are largely ignorant of the smaller towns that encapsulate the Andalucian heritage and culture. If anyone has any pointers they can share on which towns/villages to visit, which flamenco cafes to frequent, etc., I'd be greatly appreciative. Any other tourist information would be great, too. We're flying from Toronto to Rome to Sardinia, and then finally to Andalucia. Many thanks, b.h.
